Hoods, grease-removal devices, fans, ducts and other appurtenances shall be cleaned at intervals necessary to prevent the accumulation of grease. Cleanings shall be recorded, and records shall state the extent, time and date of cleaning. Such records shall be maintained on the premises. _____1. Exception: 1. Where a steel or tempered glass baffle plate is installed at a minimum 8 inches (203 mm) in height between the fryer and surface flames of the adjacent cooking appliance, the requirement for a 16 inch space shall not apply. Where the fryer and the surface flames of the adjacent cooking appliance are at different horizontal planes, the minimum height of 8 inches (203 mm) shall be measured from the higher of the two. _____1. The deep fat fryer shall be separated from the open flame gas range and shall meet the separation requirements in this code.

Each door in a means of egress from a GroupAor E occupancy having an occupant load of 50 or more and any Group H occupancy shall not be provided with a latch or lock unless it is panic hardware or fire exit hardware. _____1. The Northwest EXIT door shall have panic hardware installed.
