Reference: Section 301.3, IPC 2018. 4. Verify that the tempered water for the lavatory in the restroom uses a device approved to ASSE 1070. Reference: Sections 419.5 and 607.1.2, IPC 2018. 5. Appliances (e.g. beverage dispensers, ice makers, etc.) to be directly connected to the water supply system that do not have listed, integral backflow preventers or integral air gaps conforming to Section 608.14.1, IPC 2018 require backflow prevention. Specify the type of backflow prevention device required for each water connection. Reference: Sections 608.1 and 608.3, IPC 2018. 6. Interior waste piping upstream of the grease interceptor shall have a minimum slope of ¼” per foot (2% slope). Reference: Section 704.1, IPC 2018. 7. Provide cleanouts for all horizontal drains; the cleanouts shall be located within 40-feet of developed pipe length where more than one horizontal change of direction occurs. Reference: Section 708.1.4, IPC 2018. 8. Floor sinks in the kitchen shall discharge through a grease interceptor. Reference: Section 1003.3, IPC 2018, as amended by the City of Tucson. 9. The floor sink and hand sink located in the serving bar shall discharge to the grease waste system. 10. Verify that the Pima County Regional Wastewater Reclamation Department will allow the drain from the janitor’s sink to bypass the grease interceptor. Reference: Section 1003.3, IPC 2018, as amended by the City of Tucson. 11. A dishwasher is required to discharge to a grease interceptor but a dishwasher may not discharge through a hydromechanical grease interceptor. Verify how the discharge from the dishwasher can be accommodated with the Pima County Regional Wastewater Reclamation Department. Reference: Section 1003.3, IPC 2018, as amended by the City of Tucson. 12. Hand sinks (SK-1) in the kitchen are allowed to connect to the sanitary waste system instead of the grease waste system only if each sink has a sign posted above it stating, “HANDWASH SINK ONLY! NO FOOD PREPARATION OR DISHWASHING ALLOWED.” Reference: Section 1003.3, IPC 2018, as amended by the City of Tucson. 13. Provide a vent downstream of the grease separator to protect the seal for the grease separator. Reference: Section 1003.9, IPC 2018. 14. Introducing 75 CFM of supply air into the restroom but exhausting only 50 CFM will result in 25 CFM being recirculated directly into the dining area. Direct recirculation of ventilation air from toilet rooms is prohibited. Reference: Section 403.2.1 (4), IMC 2018. 9. Correct the ventilation calculations using the values from Table 403.3.1.1, IMC 2018. The ventilation requirement for the dining area, for example, requires 7.5 CFM per person and 0.18 CFM per square foot of floor area. Reference: Section 403.3.1.1, 403.1.1.1, and 403.3.1.1.2.3, IMC 2018. 10. Verify the dimensions of the grease duct. The minimum velocity is 500 FPM but the typical velocity is 1500 FPM. At 3900 CFM, the 14” x 10” duct has a velocity of 4011 FPM. Reference: Section 506.3.4, IMC 2018 and Section 107.2.1, IBC 2018. 11. Show that the proposed termination of the Type I exhaust duct and exhaust fan complies with requirements of Section 506.3.13.3, IMC 2018. 12. Show that combustible materials (e.g. the existing partition) are not located within 18” of the Type I hood. Reference: Section 507.2.6, IMC 2018. 13. Provide a Type I hood for the gas-fired BBQ located under the awning. Reference: Section 507.1, IMC 2018. 14. Clarify the design criteria for the Type I hood: The cooking appliances are classified ass “light-duty” which requires a minimum of 200 CFM per linear foot of hood (Section 507.5.4, IMC 2018) but the hood is noted as needing 300 CFM per linear foot of hood. 15. Provide Kitchen Exhaust Hood Keynote #11, relating to the make-up air plenum. Reference: Section 107.2.1, IBC 2018. 16. Verify that the introduction of 3900 CFM into the make-up air plenum will not void the hood manufacturer’s listing or disrupt the capture and containment of the exhaust effluent.
