2. The World Market In-Store Sampling Guidelines call for the 3-compatment sink to be used to sanitize serving dishes with the wash-rinse-sanitize method. Per Section 802.1, IPC 2006, the wash and rinse compartments shall be directly-connected and the sanitize compartment shall be indirectly-connected to the sanitary drain system.
