4. Show how the indirect waste piping manifold (serving the hot buffet table, cold table and the ice bin) complies with the requirements of Section 801.2.3 with respect to food handling fixtures having separately piped indirect waste drains.
5. The 1500-gallon gravity grease interceptor appears to have been sized for use by multiple restaurants or is over-sized for the current use. If multiple restaurants are to be using the interceptor, provide a copy of the approved petition of appeal to the building official that allows multiple users along with the projected future load for the interceptor. If the interceptor has been over-sized, show how the interceptor will be protected from the development of hydrogen sulfide gas caused by anaerobic conditions. Reference: Sections 306.1 and 1014.3.4.3, UPC 2006.
6. The natural gas branch piping serving the water heater appears to be under-sized. Size natural gas pipe per Section 1217.1, UPC 2006 or provide calculations demonstrating conformance to Section 1217.3, UPC 2006.
