The approval letter from the City of Los Angeles allows the use of a type II hood for the Holman QT14 conveyor oven provided that neither the menu items prepared in the oven nor the operating conditions of the oven are modified. The City of Tucson bases the hood requirement on the type of equipment that is to be located below the hood, not the proposed menu items. Provide a Type I hood over conveyor oven. Reference: Sections 507.1 and 507.2, IMC 2006.
2. Show that the clearances for the grease duct comply with Section 506.3.6, IMC 2006.
3. Revise the size of the grease ducts to provide a minimum velocity of 1500 feet per minute. Reference: Section 506.3.4, IMC 2006, as amended by the City of Tucson.
4. Provide a grease drain and collection reservoir for the vertical discharge fan. Reference: Section 506.5.2, IMC 2006.
