1. Sheet A1, 2018 IMC; 506.1 General. Commercial kitchen hood ventilation ducts and exhaust equipment shall comply with the requirements of this section. Commercial kitchen grease ducts shall be designed for the type of cooking appliance and hood served. Provide an engineered design for kitchen. OUTSTANDING COMMENT: Changing appliances requires design of the hood. As an example: 507.2 Type I hoods. Type I hoods shall be installed where cooking appliances produce grease or smoke as a result of the cooking process. Type I hoods shall be installed over medium-duty, heavy-duty and extra-heavy-duty cooking appliances. Once the appliance is classified the system is designed. 507.1 General. Commercial kitchen exhaust hoods shall comply with the requirements of this section. Hoods shall be Type I or II and shall be DESIGNED to capture and confine cooking vapors and residues. The code is clear on the requirement to design a hood for the appliances served. 507.5 through 507.6.1 AND Section 508 work together to ensure that the design of the hood sufficiently captures, exhausts and provides make-up air for the appliances served. Each appliance is also categorized (heavy, medium, or light) in order to calculate the exhaust rates, etc required. With an existing hood and new equipment the process/requirements is still required to be followed. DMA
