Reference: Section 1003.3, IPC 2018, as amended by the City of Tucson. 2. The Josam Model 60100H series of grease interceptor requires the installation of an air control device prior to the inlet of the grease interceptor. Reference: Section 303.2, IPC 2018. 3. A 3-compartment sink requires an indirect drain. If the sink is only used to clean dishes, pots, and pans, the indirect drain can terminate with either an air break or an air gap. If food is handled in the 3-compartment sink, the indirect drain must terminate with and air gap and each of the sink compartments must have independent drains (i.e. no manifold). The sink cannot connect directly to a grease interceptor. Reference: Sections 802.1.2 and 802.1.7, IPC 2018. [Initial comment: Verify if an existing grease interceptor is currently in place to prevent the discharge of fats, oil, and grease into the public sewer and that the existing water closets are not draining through the grease interceptor. If a grease interceptor is not in place, show how the public sewer is to be protected from harmful discharges.
