We use the term "Mobile Restaurant" because we aren't quite a food truck. Our trailer is 18' long with a complete kitchen inside, the walls come down on the sides of the trailer with hydraulics and create a deck for seating. On the opposite side of the trailer hitch, we have a spiral staircase that leads to the top of the trailer that will also be used as additional seating. This is a type III food truck.
