Cleanings shall be recorded, and records shall state the extent, time and date of cleaning. Such records shall be maintained on the premises. You are hereby ordered to immediately STOP USE of all commercial cooking equipment until you have your extinguishing/hood systems immediately cleaned and maintain records of this cleaning.
